I've been wanting to try making cauliflower breadsticks for awhile and finally got around to it last night!
Recipe:
1 bag Trader Joe's frozen cauliflower
1.5 cups shredded cheddar
3 eggs
1/2t garlic powder
1t Italian seasoning
Salt to taste

Topping:
1.5-2 cups mozzarella cheese.
1.5-2 cups mozzarella cheese.
Method:
Preheat over to 400 degrees.
Line a large baking sheet with parchment paper.
Defrost the frozen cauliflower in the microwave. Press between a few paper towels to remove excess water. Add in eggs, cheese, seasonings and mix well.

Pour mixture on to lined baking sheet. Press out until about 1/2 inch thick.
Bake at 400 for 10-15 minutes until it begins to brown. Remove from oven and flip. To do this, I slid the parchment and breadsticks off onto the back of a second baking sheet. Lined my original sheet with more parchment and then placed on top of second pan and flipped. Very easy. If you're worried about flipping, make smaller breadsticks and adjust baking time if needed.
After flipping add mozzarella cheese and return to oven for another 10-15 minutes or until cheese has melted and has begin to slightly brown.
Remove from over and allow to cool slightly. Cut and enjoy.
I dipped mine in Rao's marinara sauce!
